3 Tbsp. Softened, unsalted butter.
1 Tbsp. All-purpose flour

1 Cup (4 oz) Gruyère cheese, finely grated

1 Tbsp. Dijon mustard

Instructions

1 Preheat your oven to broil and warm nonstick skillet on the stove. Use 1 tbsp. of butter on two slices of bread , and place in the pan buttered side down, warming until golden brown. Once the bread is toasted place on plate or smooth cooking surface.
2 Melt 1 tbsp. of the butter in a small saucepan over medium until foamy. Whisk in flour; stirring , until light the mixture is a light golden brown (about 30 seconds). Slowly whisk in milk and bring to a simmer. Reduce heat to low; continue whisking until the mixture thickens and remove from heat. Add ¼ cup of the grated Gruyere whisking until melted. Stir salt, pepper, and nutmeg into the sauce (otherwise referred to as Mornay sauce).
3 Arrange 2 of the bread slices on a work surface, toasted side down. On each slice, spread 2 tbsp. of Mornay sauce evenly across both pieces. Sprinkle a ¼ cup of grated Gruyère, 2 slices of ham, spreading mustard on the remaining untoasted pieces of bread. Combine the sandwiches, pouring the remaining Monray sauce on top of each sandwich. Add remaining ¼ of Gruyere on the top of the sandwiches, place on a rimmed baking sheet and place in the oven for 5 to 7 minutes or until cheese has melted.
4 Meanwhile, melt the remaining tablespoon of butter in a nonstick skillet over medium-high heat. Crack eggs into skillet; cook, undisturbed, until the whites are set but the yolks are runny, about 3 minutes.
5 Top each sandwich with a fried egg; garnish with chives, flaky sea salt, and pepper to taste. Enjoy!
