Instructions

On a smooth work surface cut leek lengthwise into 4 strips, then thinly slice the leek crosswise.
Place skillet over medium heat. Add butter, leeks, a tsp. of salt, and cooking leeks until they are soft and lightly browned. Add in the vinegar and honey; stirring until well combined. Remove from heat.
Place all 4 bread slices on a flat surface and begin assembling the sandwich. Place 2 oz. of brie cheese on 2 slices of the bread and spread balsamic-leek jam evenly across each side of the bread and press the sandwich together
Place remaining butter in a warm skillet, heating sandwiches until crispy and golden brown.
Place sandwiches on a cutting board and use a decorative cookie cutter to cut your sandwiches. Take skewers and cut them in half with scissors. Stack the sandwich on the skewers adding lettuce or cherry tomatoes in between the sandwich pieces.
Serve with chips or a side of tomato soup to dunk your sandwich pieces into.
