BBQ Beef Burgers

Ingredients
2 Hamburger 6 Buns
1/2 lbs (250g) Ground Beef
2 Cups (450g) Baby Potatoes
2 Scallions
1 Celery Stalk
1 Apple
1 Artisan Lettuce Head
4 Tbsp. (60ml) Mayonnaise
2 Tbsp. (30ml) Sweet, Savoury Honey-Dijon vinaigrette
Garlic & Sweet Pepper spice (1 tbsp. of paprika, 2 tbsp. of preferred oil, ½ tsp turmeric, ½ tsp cayenne pepper, 1 tsp. salt, 2 cloves of garlic, ½ a finely chopped red & green bell pepper)
Instructions
1. Preheat your BBQ, making sure to oil the grill first.
2. Bring a medium pot of salted water to a boil. Halve the potatoes (quarter if large) and place in the boiling water cooking until tender (11-13 mins). Drain potatoes, place back in pot, seasoning with salt & pepper
3. Meanwhile, remove the root ends of the scallions and set aside. Using a cutting board thinly slice the celery, separate lettuce leaves, core and dice the apple.
4. In a medium bowl, combine beef, ¾ of the spices, mix well and create two patties.
5. In a separate bowl, toss the scallions with a drizzle of olive oil, salt and pepper to taste. Place your patties on the BBQ or grill pan cooking for 3 to 5 min. on each side, until cooked through. Add the scallions grilling until they are nicely, charred and set aside. Place the buns, cut-sides down, on the BBQ, heating ,until golden brown.
6. Once the potatoes are cooled, add apple, celery, vinaigrette, remaining spices, salt, pepper, mixing to combine.
7. Roughly chop the scallions. In a small bowl, combine mayo, charred scallions and S&P. Drizzle the lettuce leaves with olive oil; season with S&P.
8. Divide the buns between plates, adding mayo, the patty and lettuce. Serve with potato salad on the side. Enjoy!
